1 THEORY OF OPERA TION, SPECIFICATIONS AND INS T ALL A TION T HEORY OF OPERA TION The T urboChef ® High h Batch speed cook o ven uses high heat transfer rates developed by force air impingement to rapidly cook food. The High h batch utilizes top and bottom J etplates that have been optimized for specific food items.

O PERA TING THE OVEN Erasing the Recipe Menu (Figure 9) E rasing the Recipe M enu will permanently delete currently-stored r ecipes and recipe settings. T o erase the menu: 1. F rom the Options M enu, press the “ERAS E MENU” Soft Key (middle left) to erase menu.
Enabling/Disabling Time Screen (Figur e 11 ) E nabling the T ime Screen function allows the operator to adjust the T otal Cook T ime before initiating a Cook C ycle. D isabling it prevents the operator from doing so and helps ensure originally- programmed cook times remain unalter ed.
O PERA TING THE OVEN Enabling/Disabling Demonstration Mode (Figure 13) E nabling Demonstration M ode allows the operator to view/show every operational aspect of the oven without the oven actually heating up . By default, the D emonstration M ode is disabled unless otherwise requested by the customer .
O PERA TING THE OVEN Adjusting the Cook Chamber T emperature (Figure 14) 1. Ensure o ven is in either the Off State or Cool- down S tate. 2. V erify Edit M enu is enabled (for instructions see page 8). 3. Simultaneously pr ess and hold the “UP” and “DO WN” K eys for 1 second.

D IAGNOSING AN ISSUE NO TE: Adjustments can be made only in F ahrenheit. (5ºF equals approximately 2.8ºC.) NO TE: At 20°F , pressing the “OFFSET” Soft K ey rolls the T emperature Offset back to 0°F . 3. P ress “ENTER” to confirm. 4. When finished, press the “BACK/ST OP” Key to exit the T est Mode M enu.

33 THE CONTROL SYS TEM Cooling F ans (Figure 40) Located on the back of the oven, the Cooling F ans ventilate air into the Electrical Compartment (via the inlet fan), then back out (via the exhaust fan).

42 THE CONTROL SYS TEM Thermocouple – Cook Chamber (Figure 47) T ype K Thermocouple. Thermocouple measures the temperature of the recir culating impingement airflow . If the display indicates 999ºF/C, the Thermocouple is “ open,” resulting in an F7 F ault.
43 THE CONTROL SYS TEM Thermostat – Cooling F an (Figure 48) The Cooling F an Thermostat actuates the cooling fans when the Electrical Compartment T emperature reaches 120° F ( 49°C ).
44 THE CONTROL SYS TEM Thermostat – Hi-Limit (Figure 49) The Hi-Limit Thermostat is a 250V AC, 3-P ole, manual-reset thermostat with a trip point of 572ºF (300°C). The Thermostat, which interrupts power to the Heater E lement, should never operate during normal operation.

54 THE IMPINGEMENT CIRCUIT Heater Element (Figure 56) Sheathed-style/Calrod heaters. A ttached to the same cartridge, Heaters A and B can be tested independently of one another .
