General Information 5 1.1.1.1. Set-up site re quiremen ts The base must fulfi l the following r equirements: • It mus t be sufficiently stable, str ong, level, f lat and non-slip. • It mus t be of sufficient height to allow slicing wh ile standing.
General Information 6 • For rotary current mode ls (400 V), chec k that the running direc tion of the blade is co rrect. • The blade must mo ve downwards in di rection of the carriage as sho wn in the illus tration. • If the running dir ection is incorrec t, use a screwdriver to turn the phase chan ge in the network adapter p lug by 180°.

Operation 11 3 Operation 3.1 Operating Cont rols 3.1.1. Operating Terminal Symbol Description Function Master switch "OFF", red • Stops t he machine. Master switch "ON", green • Starts up the machine. The mac hine is ready for slicing.
Operation 12 Stroke speed button • Changes the s troke speed w ithin 2 seconds when pressed again. Adjust able in three steps depending on the st roke length. If the machine is switched "ON", the ca rriage a utomatically travels into t he "starting position" w hen the carriage coup ling is engage d.

Operation 15 • Start up the machine b y pressing th e green ON button and the blad e starts rotati ng. • After start-up, the car riage slowly t ravels into its starting position. If the carriag e is already located in this position prior to sta rt-up, there will be no positioning .
Cleaning 16 4 Cleaning The cleaning schedule is t he basis for all cleaning pr ocedures. WARNING! Rotating blade can c ause serious injuries ! Do not reach into t he blade. For t his reason: Switch off the machine and pull out t he mains plug before cle aning.

Cleaning 22 4.4 Cleaning items Take appropriate action to pr event pollution t o the environmen t when you use hand sprayers. The information refers to single-shift oper ation. You must also obser ve the safety and pr oduct data sheets that wer e included with the cleansers and disinfe cting agents.
Maintenance 23 5 Maintenance 5.1 Sharpening the B lade Caution! Danger of injury! Rotating blade can sever fingers! Only sh arpen the blade with t he sharpener provided. The sharpener has been adjust ed for this machine and must be use d for this machine only.
Maintenance 24 5.1.2. Preparing the Machine • Thoroughly clean the m achine and the blade. • Remove the guide rail and the blade co ver plat e. • Put the last slice clamp down on the ca rriage. • Push the carriage abo ut 5 cm towa rds the blade.
Maintenance 25 • Grind until a slight cu tting ridge is formed. • Switch off the ma chine with the r ed Off bu tton. • Slide a sharpened p encil slowly to the cutting edge as illustrated. • Do you feel any re sistance at the blad e cutting edge? That is the cutting r idge produced from sharpenin g.
Maintenance 26 5.2 Changing the Bl ade WA RNING! The blade is sharp! It can cause s erious injury even when it is not moving. The blade may only be replaced by authorised GRA EF service per sonnel. CAUTION! The blade must be r eplaced when the distance bet ween the blade guard ring and the blade is larger than 6 mm.
