CONTROL P ANEL FUNCTIONS CANCEL Button(s) : Turns off any selected cooking mode with a singl e press. It is also used to lock and unlock the control panel when desired. CONVECTION Button : Turns the Convection Fan On or Off when cooking for convection modes.

7 OVEN FEA TURES DEFINED 1. Mode Icons: These icons illuminate to show which ov en mode is being used. All icons will light up when Mo de selection is started and a si ngle mode will be highlighted wh en the Mode Selector Dial is rotat ed and Mode is selected.

9 USE OF YOUR OVEN INITIAL OVEN SETUP CLOCK • When powered up and prior to pressi ng any buttons the clock will flash 12: 00 and will increase each minute. • To set the oven clock pres s the CLOCK button on the control panel once. • The clock will blink indicati ng it is ready to be set and the AM or PM icon will be displayed.
10 OVEN HEA TING MODES DEFINED Your Oven features cookin g modes which are used in most form s of in-house coo king. PRE-HEAT Most recipes call for an oven to be heated to a p articul ar temperature prio r to the start of cooking.
11 OVEN HEA TING MODES DEFINED (continued) SELF CLEAN Self Clean is a special heating fun ction that raises t he oven temperature to l evels that will burn most food byproducts to ash. It is a 3 hour heating cy cle but due to the extreme heat generated, the oven d oor is automatically locked when the cycle is started.
12 POSITIONING OVEN RACKS • Your oven comes with Capital Rolle r Racks which effortlessly mo ve in and out of the oven on be aring rollers. • To completely remove a rack from the oven, before the oven is hot, grasp the rack on both the right a nd left sides and lift the rack up while allowi ng the roller brackets to rotate downward.
13 WHILE THE OVEN IS RUNNING • When a cooking mode is started the PRE icon will appear in the cl ock display. This indicates the oven is Pre-Heating. o BROIL mode does not use a Pre-Heat cy cle. o The displayed temperature will increase until the set temperature is reached.
14 SECURING THE OVEN CONTROL • The oven control can be locked into a Secure mode to prevent accidentally tu rning the oven by children or when cleaning.
15 SETTING TIMERS • The Timers are timers only and do not af fect oven fun ctions. • Your oven has two independent count down timers: T IMER 1 and TIMER 2. • The Timers may each be set from 5 secon ds to 11 h ours 50 minutes. • To set, press either TIMER 1 or TIMER 2 buttons (they each have the sam e functions).
16 SPECIAL FUNCTIONS SELF CLEAN • WARNING: Remove all racks, cooking vessels, utensil s, meat probe and all other item s from the oven prior to cleaning. • IMPORTANT: Clean excess spillage, gr ease and other co oking byproducts fro m the oven prior to Self Cleaning.
17 CONVECTION (Upper and Lower Oven on Double) • The CONVECTION button turns the oven Convecti on Fan on during a cooking mode providing an additional four modes of cooking.
18 • WARNING: Periodically check the food on the Rotisserie to make sure it does not contact oven walls or the drip pan. Fo od may become loose during coo king and may require re- positioning of the Rotisserie forks or se curing the foo d with cooking string.
19 • Press the MOIST button to allow the oven to add wate r into the oven cavity. When activated, the MOIS T button will be illuminated. o Only use the MOIST feature with oven settings above 250° F. If th e oven temperature is too low the water will not evaporate and ma y drip onto the oven bottom.
20 PROBE (Upper and Lower Oven on Double) PROBE allows the oven to monitor the food te mperature as it cooks and stops cookin g when th e food is done. The Meat Probe is inserted into the food to monitor th e internal temperature. Wh en the food is done, the cookin g mode will change to HOLD mode for two hours.
21 DELAY COOK • Your oven can be set to start cookin g at a desired ti me by presetting a co oking mode, temperatu re, and setting a start time in DELAY COOK.
22 TIMED COOK • Your oven can be set to end cooking after a set time has passed by using the TI MED COOK function. • To set TIMED COOK a cooking mode must be a ctive (or set with DELAY COOK). • Press the TIMED COOK button to enter the duration time screen.
23 TIPS General • Always center your cookware within the oven from fr ont to back and side to side to ensure ev en heating. • Darker containers will absorb more heat and will p rov ide a darker or crisp e r crust while lighter pans and vessels will reflect more heat and provide a more uniform heat.
24 CARE AND MAINTENANCE WARNING : Do not touch the interior surfaces of the oven during use. After use, ma ke sure these surfaces have had sufficient time to cool before touching them. WARNING : Do not clean the oven door gaskets. Th e door gaskets are essential for a good seal of the oven.
25 CLEANING CHART: • Always start by sele cting the mildest cleaner accord ing to the kind of soil and the mate rial soiled. To prevent marring the stainl ess steel finish, always appl y the clea ners in the direction of the grai n. Rinse and dry immediately to avoid water marks.
