14 TRADITIONAL COOKING Baking and Roasting The BAKE function is ideal for b aking, roastin g or heating casseroles. During baking or roastin g, the bake and b roil elements will cycle on and off in intervals to main tain oven temp erature. If the oven door is opened during baking or roasting, the broil and bake elements will turn off immediatel y .

1 7 Convection Roasting In the Convec t Roast fun ction, the bake a nd broil elements operate, along wi th the fan, to provide heat i n the oven cav ity . Use Convect R oast when cooking food on a single rack, such as chicken, tu rkey , tender roasts and vege table s.
1 8 STEAM-ASSI STED COOKI NG NOTE : For 208V installations i t is recommended that cooking temperatures be i ncreased by 15 ° F (8 ° C) to adjust for re duced voltag e. Steam-assi sted cooking bu ilds on the benefits of convection cooking by helping to r etain moisture, texture and flavor in food.
