1-1 CHAPTER 1: INTRODUCTIO N 1.1 General Read the instru ctions in this manual thoroug hly before attempting to service this e quipment. This manual covers all conf igurations of models MH52 and BIH52 fryers built since December 1995. Models desig nated MH52 do not have built-in f iltration systems.
1-2 1.3 Computer Information This equipment has been tested and found to co mpl y with the limits for a Class A dig ital device, pursuant to Part 15 of the FCC rules. While this de vice is a verified Class A device, it has been shown to meet the Class B limits.

2-2 NA TIONAL CODE REQUIREMENTS The ty pe of gas for which the fry er is equipped is stam ped on the data plate attached to the i nside of the fry er door. Connect a fry er stamped “NAT” onl y to natural gas, those stamped “PRO” only to propane gas, and those stamped “MFG” only to manufactured gas.

2-7 WA RNING “Dry -firing” y our unit w ill cause damage to the fry pot. Alway s ensure that melted shortening, cooking oil, or wa ter and boil-out solution is in the fry pot before firing y our unit for any extended period.
2-8 H52 Series Fry ers manufactured fo r Non-CE countries use different burners for each ty pe gas. The burners in fry ers built fo r Propane g as have a special g ray -colored coating on the burner tiles to en- able them to withstand the higher caloric va lue of the Propane gas.

Circuitry in the ignition module sends 24VAC to the gas valve via a normally closed high -limit switch (and, in BI H52 fry ers, a normally closed drain safety switch). Simultaneously , the module causes the ignitor to spark for 4 seconds to lig ht the burner.

3-5 THERM O STATS All fry ers in the H52 Series have temperature probes located on the front centerli ne of each the fry- pot. (Dual vat frypots have a probe in each vat.) I n this type thermostat, the probe resistance varies directly with the temperature.

3-9 3.6.2 Replacing the Temperature Probe or High-Limit Thermost at 1. Disconnect the fry er fro m the electrical supply . 2. Drain cooking oil below the leve l of the probe or thermostat. 3. Remove the screws from the upper corners of th e control panel and sw ing the panel open from the top, allowing it to rest on its hinge tabs.
3-10 3.6.3 Replacing the Interface Board 1. Remove the component box per st eps 1 through 9 of Section 3.6.2. 2. Unplug the controller wiring harness from th e interface board. 3. Disconnect the wires at tached to the int erface board, marking or making a note of the wires and terminals to facilitate reconnection.
3-11 3.6.6 Cleaning or Replacing a Combustion A ir Blower A sheet metal shield or shield assemb ly prevents inadvertent access to the bl ower assembly.
3-12 3. Wrap the motor with pla stic wrap to pr event wate r from ente ring it. Spra y degreaser or deterge nt on the blower wheel and the blower housing . Allow it to soak for five minutes. Rinse the wheel and housing with hot tap water, then dry with a clean cloth.
3-13 Adjusting Air/Gas Mixture Non-CE Units and CE Un its Built After April 1999 On the side of the blower housing opposite the motor is a plate with one or two locking nuts.
3-14 3.6.7 Replacing a Gas Valve DA NGE R Drain the fry pot or remove the handle f rom the drain v alve bef ore proceeding further. 1. Disconnect fryer from electrical and gas supplies. 2. Disconnect the wires from the gas valve terminal block, marking each wire to facilitate recon- nection.
3-15 8. Remove the washers and tubular spacers from th e mounting studs, then pull the inner covers straight out toward y ou until clear of the mounting studs. 9. Grasp the burne r firmly and pull it toward y ou until it clears the burner channe ls, taking care not to damag e the cer amic tiles in the process.
3-16 6. Remove the screws from the upper left and right co rners of the control panel. Open the panel, disconnect the controller wiring harness and gr ound wire. Remove the controller from the fry er. 7. Disconnect the ignition wires from the ig nitor pl ugs by grasping their boots and pulling toward y ou.
3-17 3.6.10 Replacing Fry pot Insu lation and/or Upper Burner Rails NOTE: Replacing the burner r ails require s completely tearing down the fry pot and installing ne w fry pot insulation. Refer to the fry pot ex ploded view on page 3-18 for component identification.

I nstall the upper burner rails (2) with the heat de flectors slanting toward the rear of the fry pot. The rails will cover the “L” shaped pieces of co mbustion chamber insulation previously installed.
3-20 16. Place the upper inner combustion chamber insulati on and insulation retainers (3) on the top two studs on each side of the front of the frypot and s ecure with ¼-20 washer-nuts. (I t i s normal for the retainers to slice off the overhanging insulation.
3-21 NOTE: Full vat units have a two-piece insulation ret ainer. Dual vat units have a one-piece re- tainer. 27. I f necessary , replace t he sight-glasses and insulation (14). 28. Place one washer and one 1.888-inch spacer (15) on each stud. NOTE: There are three di fferent sizes of spacers.

A series of Trouble- shooting Guides (decision trees) is also included at t he end of the chapter to assist i n identifying some of the more common problems.

3-24 Check for proper operation by disconnecting the wire from the ignitor ( spark plug ), inserting the tip of a scre w driver into the te rminal, and holding it near the frame of the fry er as the power switch is placed in the ON position. A strong, blue spark should be generated for at least 4 seconds.
3-25 I mproper temperature control probl ems can be categorized into m elt cy cle problems and failure t o control at setpoint problems. MELT CYCLE PROBLEM S The melt cy cle is automatically initiated by the controller (Analog , M100B, or M2000) when the controller is first turned on.
3-26 Whenever the complaint is “the pump is running, but no oil is being filtered,” check the installation of the filter paper, including that the correct size is be ing used. While y ou are che cking the filter pa - per, verify that the O-ring on the bottom of the filter pan is present and in good condition.
